Nitrates Increase the Risk of Thyroid Cancer 14 June 2010
A study published in the May 2010 edition of the journal Epidemiology has found that a high intake of nitrates from either public water supplies or food was associated with a significantly increased risk of thyroid cancer.
Take home message: High nitrate levels are found in some public water supplies and cured meats such as bacon and hot dogs. Nitrates get converted to nitrosamines which are powerful carcinogens. I choose to only drink natural spring water from glass bottles and eat non-cured meat from organic, grass fed animals.
