Carrots and carrot juice are a wonderful addition to an alkaline, antifungal nutritional programme. Carrots have over 400 antioxidant caretenoids (not just beta-carotene). They also contain falcarinol which is a potent antifungal. Having a daily vegetable juice which includes carrots as one of the vegetables is an absolutely essential component of good health and is a perfect way to start the day. The concerns over the sugar content and glycaemic index of carrot juice is unwarranted because of their powerful antifungal effect.
