Apolipoproteins are specific proteins in the blood. There are many different apolipoproteins and they are genetically determined. People with apolipoprotein E4 (ApoE4) have a significantly higher risk of Alzheimers disease than those with other forms of apolipoprotein E. ApoE4 is not as efficient as other apolipoproteins at preventing the formation of the amyloid plaques associated with AD. However research has shown that people with ApoE4 who had the highest levels of beta-carotene had an 89% less risk of cognitive decline. The good news was that even if you don’t have ApoE4, high beta-carotene levels meat an 11% risk reduction.
